Traditionalists may be appalled by the idea of dry-hopping a cider. For the purist, great cider is born from the art of fermenting good apples and little else. Hops first found favor amongst beer brewers as a preservative, with their bittering and aromatic qualities really just a pleasant side-effect. Since cider has a natural tannic quality, and since it is not “brewed” to release the bitter compounds in the hops, why would hops find a home in the cider house? Click here to read the full article.

If there is one staple that just about every American cider maker produces besides good, old “cider,” it has to be cherry cider. I would like to believe that there was some divine intervention by the goddess Pomona to inspire such a blend but, realistically, it is most likely the result of local availability. Most cherries are grown in temperate regions, with the Pacific Northwest, Michigan, and (to a much lesser extent) the Hudson Valley producing the bulk of the country’s cherries. TIETON, Wash. — In the heart of Yakima’s wine country, a Tieton company is growing one of the state’s largest orchard of cider apples. It’s about 20 acres. Compare that to the more than 150,000 acres of apples growing throughout the rest of Washington. Those 20 acres in Tieton, combined with a few more acres of cherries, apricots and pears — Tieton Cider Works boasts the nation’s largest orchard of Perry pears at about 7 acres — are the sole source of fruit for the 6-year-old company’s nine varieties of hard apple cider. The artisan cider company is owned by Sharon and Craig Campbell. It is one of only seven cider makers in the state and has grown exponentially since its launch. This year, the cidery is on schedule to exceed 10,000 cases of cider, plus another 10,000 case-equivelents in kegs. In 2008, they made 144. Click here to read the full article.
